Easy Chipotle Sweet Potato Puree

This is a perfectly balanced chipotle sweet potato puree side dish that hits all of the flavor notes of smokey, bright, slightly sweet and silky smooth with a touch of spice.

Ingredients

  • 3 pounds sweet potatoes similar in size to each other
  • 1 single chipotle pepper from a can of chipotle pepper in adobo sauce
  • 4 tablespoons salted butter sliced into 4 cubes
  • 2 tablespoons lemon juice about half a lemon
  • teaspoons Diamond Crystal kosher salt

Instructions

  • Wash the unpeeled sweet potatoes and pierce with fork 6-8 times per potato.  You don’t have to pierce them very deep as they are quite hard.
  • Microwave the sweet potatoes until they are soft. Their internal temperature should be 205-212 ℉ with an instant read thermometer.  The time will vary based on the thickness of your sweet potato. My 1150 watt microwave takes 17 minutes.
  • Place the hot and cooked sweet potatoes on a large plate or cutting board.
  • Open the cooked sweet potatoes by cutting them down the middle. Use caution as they are hot.
  • Spoon out the pulp and transfer it to the food processor bowl and add the butter. The warmth of the sweet potatoes will melt the butter. 
  • Add the chipotle pepper, butter, lemon juice, and salt to the bowl.
  • Puree the mixture for 60 seconds.  Remove the lid and stir the mixture with a spoon.  Close the lid and puree 30-60 seconds longer until smooth.
  • Taste the puree for seasoning. It may need a pinch of salt to finish.

Notes

You can keep this puree warm in an oven-proof container with the oven set on the lowest temperature setting for up to 2 hours.
Once cooled, this dish can be stored covered in the refrigerator up to 4 days. Suggest using a microwave-safe container for storage so you can simply warm it up in the microwave before serving.
