- Cilantro: Use a full half cup, stems included. Don't skip it and don't cut it back. It's the backbone of the flavor here, and it's what separates this from a standard ranch dressing.

Not as written. Using half a seeded jalapeño gives you Tex Mex flavor and a mild tingle, not heat. If your jalapeño turns out to be especially hot, use less. Taste it first.
No. Dried cilantro doesn't work here. It loses all of its bright, herby character when dried. Fresh is the only way to go.
You can, but I find it to be somewhat sweet. Full-fat mayonnaise gives you the best texture and flavor.
Stir it first to loosen it. If still too thick, stir in a teaspoon of water or milk. Add a little at a time until you reach your preferred consistency.
